Energy Balls: Squirrel Hill Food Pantry Healthy Recipe Series

It’s hard not to overindulge at any time of the year, and especially around the holiday season. Many of us make resolutions at the beginning of the year to live a healthier lifestyle. Try these easy-to-make fiber- and protein-rich Energy Balls for a nutritious pick-me-up. Bonus: you’ll feel full longer!

Energy Balls

Ingredients

  • ½ cup natural peanut or almond butter
  • ¼ cup coconut palm syrup, maple syrup, or honey
  • 1 teaspoon vanilla extract
  • 1/3 cup protein powder of your choice
  • 1/3 cup of flaxseed meal
  • 1/3 cup unsweetened shredded coconut
  • ½ cup rolled oats
  • 1 tablespoon mini chocolate chips
  • 1 tablespoon chia seeds

Instructions

  • In a large bowl, mix together peanut butter, coconut palm syrup, and vanilla extract until well combined. Add in protein powder, coconut, flaxseed meal, oats, chocolate chips, and chia seeds. Mix until well combined. Don’t be afraid to use your hands!
  • Form 12 balls using the dough. If it’s not sticky enough, you might need to add more nut butter to hold it all together.
  • Place the balls in an airtight container. Store in the fridge for up to 1 week, or the freezer for a month. Enjoy!
